Flower Pigments
The usual pigments in most flowers are of three types:
- Anthocyanins -- red, purple, and blue colors; water soluble.
- Flavones -- pale yellow colors; water soluble.
- Carotenes -- yellow, orange, and red colors; oil or fat soluble.
